Then you’ll move into the heart of the menu: a slow-braised off the bone oxtail ragù with rigatoni inspired by Rome’s legendary coda alla vaccinara. It’s rich, soulful, and deeply satisfying. The Secondo of oven-roasted asparagus finished with Parmigiano Reggiano rests lighter on the palate after the rich Primo. A clean, fresh citrus sorbet closes the evening. Thoughtfully paced and paired, this is a menu designed for January. It’s comforting without excess, elegant without indulgence, and meant to be savoured slowly with good wine in good company.
